  1. [Day 1; 23:00] Feed starter
  2. [Day 2; 07:30] Mix all ingredients to combine.
  3. [Day 2; 07:40] Mix for 10 minutes.
  4. [Day 2; 08:30] Fold.
  5. [Day 2; 09:00] Fold.
  6. [Day 2; 09:30] Fold.
  7. [Day 2; 10:00] Fold.
  8. [Day 2; 11:00] Split into two pieces and ball up, place in lightly oiled tub with lid.
  9. [Day 2; 14:00] Put into fridge.
  10. [Day 3 or 4; 17:30] Take out of fridge.
  11. [Day 3 or 4; 19:00] Get a cast iron pan heating on the hob, and the grill on max, with a rack just underneath it.
  12. [Day 3 or 4; 19:05] Dough into pan, add sauce and toppings quickly. Move the pan under the grill, check after 4 minutes & rotate, then again after 2 more minutes.
