Method

  1. Preheat your oven to 180°C. Place a large baking tray in the oven.
  2. Cut the sweet potato into wedges and the peppers into slightly larger pieces, toss in oil, salt, paprika.
  3. When the tray is hot, place the vegetables in the oven for 25 minutes, until soft / charred.
  4. When the vegetables are almost done, fry the halloumi.
  5. Toast the pitta.
  6. Spread the homous inside.
  7. Assemble the pitta and serve with the sweet potato on the side.
