Method

  1. Rinse the rice then add the water, and a bit of salt.
  2. Make a paste of garlic and ginger.
  3. Slice the chillies.
  4. Cut the pepper into bite-size chunks.
  5. Cut the mackerel into bite-size chunks.
  6. Start to boil the rice, then once bubbling, put to the lowest heat and cover. It should take about 10 minutes.
  7. On a relatively high heat, fry the garlic, ginger and chillies for a few seconds.
  8. Add the peppers.
  9. Once the peppers are getting charred, add the mackerel to warm through.
  10. Add a glug of soy sauce to the bottom of the pan and let it fry a bit.
  11. Serve the rice with the curry on top.
