  1. [Day 1; 23:00] Feed starter
  2. [Day 2; 07:30] Mix all ingredients to combine.
  3. [Day 2; 07:40] Add olive oil and mix for 10 minutes.
  4. [Day 2; 08:30] Fold.
  5. [Day 2; 09:00] Fold.
  6. [Day 2; 09:30] Fold.
  7. [Day 2; 10:00] Fold.
  8. [Day 2; 11:00] Line the pan with baking paper and spread a layer of oil, put the dough in, and cover.
  9. [Day 2; 11:30] Gently lift and stretch the dough to encourage it to fill the pan.
  10. [Day 2; 12:30] Gently lift and stretch the dough to encourage it to fill the pan.
  11. [Day 2; 14:00] Put into fridge.
  12. [Day 3; 10:00] Take out of fridge.
  13. [Day 3; 15:00] About 30 minutes before the dough is ready, preheat the oven to 230°C with a rack placed in the bottom third.
